We love cooking with cast iron here, but I'm going to be honest: while there are a lot of new cast-iron pan manufacturers out there, and I've had a chance to try a lot of them, nothing has seemed to equal the vintage cast iron pans that I've collected.

New pans tend to suffer from two main drawbacks: They are either heavier, or not nearly as smooth, or both.

But Lancaster Iron's Pennsylvania-made pan seems to defy all that. It's as light as my Griswold, very evenly balanced, and the interior is as smooth as if I'd been cooking with it for years. After just a week of testing, fried eggs floated around inside it like I was cooking with nonstick.

They've only be around for a few years, but this impressive company seems to be making the best new cast iron out there.
